Due to the broadly conjectural nature of this project, which is unavoidable due to the limitations on first-hand evidence of specific dishes that were prepared, the first pillar of development is an analysis of the archaeobotanical evidence for availability of specific foodstuffs in specific locations during our time period. There is scant additional literary evidence that may also be included.

To this end, I have compiled a database of foodstuffs for which we have archaeobotanical or archaeological evidence, including data about which regions of the Norse world they have been found in. This database is a reorganization and expansion of the work of Jennifer Baker. Before using this information in your own cooking, please consider the safety, ethics, and legality of each ingredient carefully.
