The Goodman also gives us a specific recipe for Hippocras Powder, as well as how to make Hippocras itself. The Hippocras Powder is used in other recipes, so I present it here. He does go on to tell us that if we mix 1/4 c. of this powder with 3/4 c. of Sugar, we’ll have Duke’s Powder. And, should we desire we could mix that further with about 2 L of wine, heat it to dissolve the sugar, and then strain it well to have Hippocras in the style of Paris. The recipe for Hippocras as made in Bésiers, Carcassone, and Montpelier is different and not presented here but, interestingly, includes Nard.
